Sago Pearls
Small white pearls that turn translucent and pleasantly chewy when simmered – the basis of traditional sago pudding and a staple of South and Southeast Asian desserts and sweet drinks.

Kitchen notes: simmer in plenty of water until the pearls go clear, then rinse. Classic uses: milk-based sago pudding, coconut milk desserts with palm sugar, and chilled sweet soups.
