Fermented Sauces
Real fermented sauces take months – sometimes years – to develop their depth. Many commercial condiments fake it with chemical shortcuts, colours and syrups. These don't.
Soy sauce & tamari: slowly barrel-aged rather than made from chemically hydrolysed soy protein. The fermentation breaks down the proteins naturally, giving a rich, mellow umami. Tamari is the naturally gluten-free option.
Lacto-fermented hot sauces: slow fermentation builds tangy complexity and layered warmth, rather than plain vinegar heat.
Pastes & condiments: earthy miso, spicy gochujang and other fermented building blocks – a spoonful adds depth and savoury backbone to stews, glazes and soups.
Raw options: many unpasteurised sauces remain alive, carrying beneficial enzymes alongside their flavour.

Fermented Sauces FAQs
What's the difference between soy sauce and tamari? Both are fermented from soya beans, but tamari is made with little or no wheat, so it's usually gluten-free and has a richer, smoother flavour. Standard soy sauce is brewed with wheat and tends to be saltier and sharper.
Are these sauces gluten-free? Tamari usually is, and many fermented hot sauces are too, but soy sauce brewed with wheat is not. Always check the individual product page if you're avoiding gluten.
Are they vegan? The soy sauces, tamari, miso and most fermented hot sauces here are plant-based. Check the product page to confirm for a specific sauce.
How should I store them? Most keep in a cool, dark cupboard, but raw and unpasteurised sauces are best refrigerated once opened to protect the live cultures and flavour. The label will say.
