What's the difference between plain and bread flour?

Is gluten-free flour a direct 1:1 swap?
Not always. Gluten-free flours like almond, coconut and rice behave differently from wheat, and coconut flour in particular absorbs far more liquid. Use a recipe designed for them, or a ready-made gluten-free blend, for the best results.
How long does flour keep?
White flour keeps up to a year in an airtight container. Wholegrain and nut flours contain natural oils, so use them within a few months or store them in the fridge.
