Whole Green Beans with Cherry Tomatoes and Garlic

400 g green beans, trimmed

200 g cherry tomatoes, halved

3 garlic cloves, finely chopped

2 tbsp fresh flat-leaf parsley, chopped

3 tbsp extra-virgin olive oil

1 tbsp red wine vinegar, (or lemon juice)

½ tsp chilli flakes, to taste

freshly ground black pepper
Directions
Blanch the green beans in boiling salted water for 3–4 minutes until just tender, then drain and refresh under cold water to keep them bright.
Warm the olive oil in a pan over a medium heat and gently fry the garlic and chilli flakes for 1–2 minutes until fragrant and just golden — don't let the garlic burn.
Add the cherry tomatoes and cook for 2–3 minutes until they start to soften and blister.
Tip in the beans, add the vinegar, and toss to coat and warm through. Season, scatter with parsley and serve warm or at room temperature.
